Reports To: Deputy General Manager / General Manager
Salary: €38,000 - €40,000 per annum (DOE)
About the Role:
We are currently seeking a dynamic and experienced Duty Manager to join a busy hospitality team in Carrigaline. This is a hands-on leadership role overseeing food & beverage operations, ensuring high standards of service, smooth daily operations, and guest satisfaction across multiple outlets.
Key Responsibilities:
Operations & Guest Experience
Oversee daily service across multiple venues including bar, dining areas, and function spaces
Manage AM and PM shifts covering breakfast, lunch, carvery, dinner, and evening bar service
Handle customer queries, feedback, and complaints efficiently
Support seamless coordination of conference, banquet, and event operations
Ensure all daily bills and reports are accurate and properly posted
Team & Shift Leadership
Create and manage staff rosters aligned with labour budgets
Support recruitment, training, and performance management in conjunction with HR and senior managers
Foster a culture of service excellence within the team
Stock & Cash Management
Oversee purchasing, delivery checks, and stock control procedures
Monitor bar and F&B margins, and investigate any variances
Ensure secure and accurate cash handling, reconciliations, and credit card processing
Health, Safety & Compliance
Uphold food safety (HACCP), licensing, and health & safety standards
Ensure proper maintenance and safe use of all equipment and solvents
Report incidents or hazards and coordinate with senior management
Security & Property Oversight
Responsible for opening/closing the premises as required
Liaise with night porters and ensure all security protocols are followed
Service Excellence & Standards
Champion service excellence across all touchpoints
Attend and implement training and standards initiatives across departments
Requirements:
Proven experience in a Duty Manager or senior hospitality supervisory role
Strong knowledge of bar and restaurant operations
Excellent leadership, problem-solving, and interpersonal skills
Ability to lead a team in a busy, customer-focused environment
Flexibility to work shifts, including evenings and weekends
