Job Title: Duty Manager

Location: Carrigaline, Co. Cork
Job Type: Full-time, Permanent
Sector: Hospitality - Food & Beverage / Operations Management
Reports To: Deputy General Manager / General Manager
Salary: €38,000 - €40,000 per annum (DOE)


About the Role:

We are currently seeking a dynamic and experienced Duty Manager to join a busy hospitality team in Carrigaline. This is a hands-on leadership role overseeing food & beverage operations, ensuring high standards of service, smooth daily operations, and guest satisfaction across multiple outlets.


Key Responsibilities:

Operations & Guest Experience

  • Oversee daily service across multiple venues including bar, dining areas, and function spaces

  • Manage AM and PM shifts covering breakfast, lunch, carvery, dinner, and evening bar service

  • Handle customer queries, feedback, and complaints efficiently

  • Support seamless coordination of conference, banquet, and event operations

  • Ensure all daily bills and reports are accurate and properly posted

Team & Shift Leadership

  • Create and manage staff rosters aligned with labour budgets

  • Support recruitment, training, and performance management in conjunction with HR and senior managers

  • Foster a culture of service excellence within the team

Stock & Cash Management

  • Oversee purchasing, delivery checks, and stock control procedures

  • Monitor bar and F&B margins, and investigate any variances

  • Ensure secure and accurate cash handling, reconciliations, and credit card processing

Health, Safety & Compliance

  • Uphold food safety (HACCP), licensing, and health & safety standards

  • Ensure proper maintenance and safe use of all equipment and solvents

  • Report incidents or hazards and coordinate with senior management

Security & Property Oversight

  • Responsible for opening/closing the premises as required

  • Liaise with night porters and ensure all security protocols are followed

Service Excellence & Standards

  • Champion service excellence across all touchpoints

  • Attend and implement training and standards initiatives across departments


Requirements:

  • Proven experience in a Duty Manager or senior hospitality supervisory role

  • Strong knowledge of bar and restaurant operations

  • Excellent leadership, problem-solving, and interpersonal skills

  • Ability to lead a team in a busy, customer-focused environment

  • Flexibility to work shifts, including evenings and weekends
